Old serde Parquet tables are no longer recognized by Kite

            Description

            CDK-591 changed the SerDe class that Kite uses when it creates tables. But this is used in a BiMap to also recognize the format of the table. If the new serde is available, but there are tables present still using the older serde those older tables will not be recognized as Parquet tables by Kite.
